Ingredients:
- 1 whole chicken, cut into pieces
- 200g bacon, chopped
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 tablespoons flour
- 3 cups red wine (Burgundy preferred)
- 1 cup chicken broth
- 200g mushrooms, sliced
- 1 bay leaf
- Fresh thyme sprigs
- Salt and black pepper to taste
- Fresh parsley for garnish

Instructions:
1. Heat olive oil in a large pot and cook bacon until crispy. Remove and set aside.
2. In the same pot, brown the chicken pieces on all sides. Remove and set aside.

- 2 tomatoes, pureed
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon chili powder
- Salt to taste
- Fresh cilantro for garnish
- Lemon wedges for serving

Instructions:
1. Cook the soaked chickpeas in a pressure cooker or pot until tender. Drain and set aside.
2. Heat oil in a large pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
3. Add garlic, ginger, and green chilies, cooking until fragrant.
4. Stir in the tomato puree and cook until the oil separates from the mixture.
5. Add coriander, ground cumin, turmeric, garam masala, and chili powder. Cook for a few minutes.
6. Add the cooked chickpeas and some water to create a thick curry. Simmer for 15–20 minutes.
7. Season with salt, garnish with fresh cilantro, and serve with rice or naan bread, with lemon wedges on the side.

Mexican Cuisine: Enchiladas

Mexican cuisine is celebrated for its bold flavors and vibrant colors. Enchiladas, tortillas rolled around a filling and covered with a savory sauce, are a versatile and delicious dish.

Ingredients:
- 12 corn tortillas
- 2 cups cooked chicken, shredded
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 cups enchilada sauce
- 1 cup grated cheddar cheese
- 1 cup grated Monterey Jack cheese
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Sour cream and sliced avocado for serving

Instructions:
1. Preheat the oven to 375°F (190°C).

Ingredients:
- 500g chicken breast, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1/2 cup roasted peanuts
- 4 dried red chilies
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 tablespoon cornstarch mixed with two tablespoons water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked white rice for serving

Instructions:
1. Heat vegetable oil in a wok over medium-high heat. Add dried chilies and cook until they darken.
2. Add diced chicken and stir-fry until browned and cooked through. Remove and set aside.
3. In the same wok, add garlic, ginger, bell pepper, and zucchini. Stir-fry until vegetables are tender.
4. Return the chicken to the wok, add soy sauce, hoisin sauce, rice vinegar, and sugar. Stir well.
5. Pour in the cornstarch mixture and cook until the sauce thickens.
6. Add roasted peanuts and green onions, stirring to combine.
7. Season with salt and pepper, and serve over cooked white rice.
